1½ tbspns of Spice Bazaar
Baharat
3 tbspns of olive oil
4 cups green lentils, picked clean and rinsed
1 chopped spanish onion
1 clove garlic, finely chopped
1 each large red and green capsicum, chopped
2 carrots, chopped
1 large potato, chopped
3 tomatoes, chopped |

In a large saucepan cover lentils with water. Bring to boil, removing
any scum. Simmer for 30 minutes. Drain, rinse well and drain again.
(2) Add olive oil, Spice Bazaar Baharat, garlic, onion, & carrots
to another pan & fry gently for 5 mins.
(3) Add capsicums and simmer until carrot is just cooked, around
10 mins.
(4) Add tomatoes, stir, then add 1 1/2 cups boiling water.
(5) Bring back to boil and add potato.
(6) Reduce heat and simmer until potato is cooked
(7) Stir through the lentils then simmer for 5 minutes to reheat.
Serve with fresh basil and couscous. |
