Chicken Masala Balti

2 tbspns of Spice Bazaar Balti Sauce Mix
2 tbspns of olive oil
415g can of tomatoes
4 chicken thigh fillets
1 cup of yoghurt
vegetables
naan bread

(Serves 4)
  1. Fry 2 tbspns of Spice Bazaar Balti Sauce Mix in 2 tbspns of olive oil for a few seconds to release the aroma. Don't brown or burn it.
  2. Add the contents of a 415g can of tomatoes, chopped.
  3. Add 4 chicken thigh fillets, chopped into cubes.
  4. Simmer covered, for 10 minutes.
  5. Stir through 1 cup of yoghurt and simmer uncovered for another 5 minutes.
  6. Serve with steamed vegtetables and naan bread.

Alternatively you could toss in some chopped zucchini and capsicum a few minutes before adding the yoghurt to create a one pan dish
