Spinach, Tofu and Mushroom Balti

Delicious vegetarian specialty that combines the best of indian flavours Vegetarian

1 bunch of spinach, or other green leafy vegetable.
2 tbspns of Spice Bazaar Balti Sauce
2 tbspns of olive oil
415g can of tomatoes
250g of firm tofu cutinto cubes
250g small mushrooms, cleaned and halved
roti and/or rice.

(Serves 4)
  1. Carefully clean 1 bunch of spinach, or other green leafy vegetable.
  2. Fry 2 tbspns of Spice Bazaar Balti Sauce Mix in 2 tbspns of olive oil for a few seconds to release the aroma. Don't brown or burn it.
  3. Add the contents of a 415g can of tomatoes, chopped. Simmer sauce for 10 minutes.
  4. Chop spinach leaves in half. Slice 250g of firm tofu into cubes.
  5. Clean 250g small mushrooms and add all 3 ingredients to the balti sauce. Simmer very briefly, for around 3 minutes.
  6. Serve with roti and/or rice.
