African Macaroni Cheese

Definitely not a traditional dish, but Fiona's African Macaroni Cheese is quick and easy when you want a tasty dinner. Vegetarian

1 tbspn of Spice Bazaar Berbere
2 tbspns of olive oil
3 cups cooked macaroni (or your choice of pasta style)
1 onion, sliced
2 cups cabbage, sliced
1 cup cheddar cheese, grated

(Serves 4)
  1. In a large saucepan fry Spice Bazaar Berbere in 2 tbspns of olive oil for a few seconds to release the aroma. Don't brown or burn it.
  2. Add the onion and gently fry for 5 minutes.
  3. Add in the sliced cabbage and continue frying until cabbage is wilted, adding a little water if necessary to keep mixture from drying out too much.
  4. Stir in the pasta and cheese and continue stirring over heat until pasta is warm and cheese is melted.
  5. Serve with a crisp green salad and crusty bread.
