Macaroni Cheese |

not a traditional dish, but Fiona's African Macaroni Cheese is quick
and easy when you want a tasty dinner. |

1 tbspn of Spice Bazaar Berbere
2 tbspns of olive oil
3 cups cooked macaroni (or your choice of pasta style)
1 onion, sliced
2 cups cabbage, sliced
1 cup cheddar cheese, grated

In a large saucepan fry
Spice Bazaar Berbere in 2 tbspns of olive oil for a few
seconds to release the aroma. Don't brown or burn it.
- Add
the onion and gently fry for 5 minutes.
- Add
in the sliced cabbage and continue frying until cabbage is wilted,
adding a little water if necessary to keep mixture from drying
out too much.
- Stir
in the pasta and cheese and continue stirring over heat until
pasta is warm and cheese is melted.
- Serve
with a crisp green salad and crusty bread.
