Roast Vegetable & Pasta Salad with Capers & Dukkah

Delicious combination of sweet and tangy flavours with a nutty base. Can be served warm or cold. Vegetarian

1 cup roasted vegetables:
- pumpkin
- zucchini
- red capsicum
- mushrooms
1 cup al dente cooked pasta
3 tbspns olive oil
1 tbspn balsamic vinegar
2 tbspns chopped capers, rinsed and chopped
2 tbspns Spice Bazaar Dukkah

(Serves 4)
  1. Roast or BBQ your favourite vegetables until just cooked.
  2. Slice and add to cooked pasta.
  3. Mix through the dressing made from olive oil, balsamic vinegar, capers and Spice Bazaar Dukkah.
  4. Serve with crusty bread and a good wine.
