1.Boil
or microwave potatoes until soft, mash.
2. Add water and mix to make a thick gravy.
3. Heat oil in a heavy based pan, Spice
Bazaar Madras Curry and fry for a few seconds to release the
aroma. Don't brown or burn it.
4. Add remaining ingredients and cover.
5. Increase heat a little and simmer for 5 minutes, stirring frequently.
Add a little water mixture is too dry.
6. Add potato gravy.
7. Cover and simmer for 5 minutes.
8. Serve with rice or naan bread.
