Cajun Lamb With Sweet Potato

(Serves 4)
8 lean lamb cutlets
2-3 tbspns of Spice Bazaar Cajun Blend.
4 tbspns of olive oil
mashed sweet potato,
2 sliced zucchini
1 cup chopped mushrooms
1tbspn Spice Bazaar Dukkah

 
  1. Coat 8 lean lamb cutlets ( or equivalent other lamb cut) with 2-3 tbspns of Spice Bazaar Cajun Blend.
  2. Fry in 2 tbspns of olive oil for 4 minutes each side (don't overcook) to create a blackened crust.
  3. Simmer sliced zucchini and chopped mushrooms in 2 tbspns olive oil with 1tbspn Spice Bazaar Dukkah
  4. Serve with mashed sweet potato.
