1.
Combine tomatoes, onion, and parsley, all finely chopped.
2. Add worcestshire sauce, vinegar, tomato sauce, 2 tbspn olive
oil and add a couple of drops of tabasco sauce to taste.
3. Toss and leave for 30 minutes before serving.
4. Coat 4 chicken thigh fillets in 2-3 tbspns Spice Bazaar Cajun
Blend.
5. Fry in 2 tbspns olive oil for 5 mins on each side. Serve on
a bed of baby spinach leaves, alongside the tomato salsa. |
